Tani Creek Farm Pesto
2 cups freshly picked basil (chopped, tightly packed)
8 tbsp olive oil
5 cloves garlic
pinch of salt
3 tbsp soaked sunflower seeds or pine nuts

Blend the above ingredients in food processor.

3 or more tbsp parmesan cheese
2 tbsp butter

Mash cheese and butter together in bowl.  Add the pesto base to cheese and mix.  This makes a rich and delicious pesto to eat on local bread, crackers, and especially penne pasta.  Add to hot pasta with sauteed zucchini and sliced tomatoes for a delicious dinner
